In his new approach to the elaboration and understanding of cognac, Olivier Blanc draws his inspiration from the classified Bordeaux. First in selecting what he believes are the best vineyards of the cognac region, second in choosing words describing with sensuality the visual and aromatic evolution of the cognac as well as its taste.
In this state of mind, the cognacs from Léopold Gourmel define 5 periods in the life of the cognac expressing also the typical colours , aromas and taste of each of those moments. The levels of quality, the first one is already quite remarkable, are distinguished by the word carats and follow names that one can understand easily:

• Age du Fruit (10 carats),
• Age des Fleurs (15 carats),
• Age des Epices (20 carats),
• Quintessence (30 carats).
  

Each word on the label describes in a simple way the natural aromatic period of the cognac during the long years of ageing enabling the newcomer as well as the cognac aficionados to select the one they will prefer according mainly to their taste and guided by clear and poetic explanations.
